# Ingredients:

01 - 2 cups leftover mashed potatoes
02 - 1 cup shredded cheddar cheese
03 - 1/4 cup grated Parmesan cheese
04 - 2 green onions, finely chopped
05 - 1/4 cup all-purpose flour
06 - 1 large egg, beaten
07 - 1/4 teaspoon garlic powder
08 - Salt and pepper to taste
09 - Bread crumbs for coating (optional)
10 - Olive oil or cooking spray for greasing

# Instructions:

01 - Preheat your oven to 400°F (200°C). Grease a baking sheet with olive oil or cooking spray.
02 - In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, finely chopped green onions, all-purpose flour, beaten egg, garlic powder, salt, and pepper. Mix until well combined.
03 - Shape the mixture into small balls or patties and place them on the prepared baking sheet. For extra crispiness, roll the potato cheese puffs in bread crumbs if desired.
04 - Bake in the preheated oven for 20-25 minutes, or until the cheese puffs are golden brown and crispy on the outside.
05 - Remove from the oven and let cool slightly before serving. Serve the leftover mashed potato cheese puffs hot as a tasty snack or side dish.
