Jalapeno Peach Chicken Dish (Print Version)

# Ingredients:

01 - 2 lbs boneless, skinless chicken thighs or breasts
02 - 1 tsp smoked paprika
03 - 1 tsp garlic powder
04 - 1.5 tsp kosher salt
05 - 1/2 tsp black pepper

→ Glaze

06 - 2 ripe peaches, pitted and sliced
07 - 1/4 cup peach preserves or apricot preserves
08 - 2 tbsp apple cider vinegar
09 - 1/2 jalapeno pepper, seeded and minced
10 - 1 tsp olive oil

# Instructions:

01 - Pat the chicken dry and season generously with smoked paprika, garlic powder, kosher salt, and black pepper.
02 - Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through.
03 - Preheat your grill to medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through.
04 - While the chicken cooks, combine peaches, peach preserves, apple cider vinegar, jalapeno, and olive oil in a small saucepan. Bring to a simmer over medium heat, mashing some of the peaches with a fork to create a chunky sauce. Cook for 5-7 minutes, or until the sauce thickens slightly.
05 - Once the chicken is cooked, transfer it to a plate. Add the glaze to the pan and bring to a simmer. Add the chicken back to the pan and spoon the glaze over it for a minute or two to heat through. Serve the chicken with the remaining glaze spooned on top.
