Horchata Recipe (Print Version)

# Ingredients:

01 - 1 1/2 cups uncooked long-grain white rice.
02 - 2 Mexican cinnamon sticks.
03 - 4 cups hot water.
04 - 2 cups milk or almond milk.
05 - 2 teaspoons vanilla extract.
06 - 2 teaspoons ground cinnamon.
07 - 1/3 - 1/2 cups granulated sugar, to taste.

# Instructions:

01 - Combine rice, 2 cups hot water, and Mexican cinnamon sticks in blender.
02 - Blend mixture until rice and cinnamon sticks are roughly ground into fragrant slurry.
03 - Add remaining 2 cups hot water to blender and blend again until well mixed.
04 - Transfer mixture to pitcher or container with lid and refrigerate overnight or at least 8 hours, allowing flavors to meld.
05 - Strain rice mixture through fine mesh strainer or cheesecloth into clean pitcher, discarding solids.
06 - Gently stir in milk, vanilla extract, ground cinnamon, and sugar to taste.
07 - Chill until ready to serve. Stir well and pour over ice.
