18 - 1 tablespoon of sesame oil
19 - 1 lime, cut into wedges for serving
20 - 1 teaspoon of fish sauce (optional)
21 - 2 tablespoons of crushed peanuts for garnish

# Instructions:

01 - Slice the beef into thin strips. Mince the garlic, grate the ginger, and chop the vegetables. Set everything aside separately.
02 - Bring a pot of water to a boil and cook noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.
03 - Mix hoisin sauce, soy sauce, garlic, and ginger in a small bowl. Add beef to this marinade, ensuring full coating. Let sit for at least 15 minutes.
04 - Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Stir-fry bell peppers, carrots, and additional vegetables for 3-4 minutes until slightly softened.
05 - Push vegetables to one side of the skillet and add the remaining 1 tablespoon of oil. Stir-fry the beef strips for 5-7 minutes until browned and cooked through.
06 - Add cooked noodles to the skillet with the beef and vegetables. Pour in any remaining marinade and toss to combine. Stir in green onions and cook for 2 more minutes.
07 - Drizzle sesame oil over the dish, if using. Garnish with sesame seeds, cilantro, and chili flakes to your preference.

# Notes:

01 - Ensure all ingredients are prepped before starting as stir-frying is a quick process.
02 - To prevent the noodles from clumping, rinse them in cold water after boiling.
03 - Taste and adjust seasonings like soy sauce or lime as needed before serving.
