01 -
Turn the oven to 375°F (190°C) to preheat. Get a baking tray ready with parchment paper while you're at it.
02 -
In a pan, warm up the butter with the olive oil. Add the shallots and soften them (about 2-3 minutes). Stir in the garlic for a minute, then toss in the mushrooms. Cook till they're soft and all the moisture's gone (around 5-7 minutes). Sprinkle on salt and pepper and let the mix cool.
03 -
Lightly coat your surface with some flour, then stretch out the puff pastry to make it thinner. Slice it into square or rectangle shapes—it’s up to you!
04 -
Spread some mushroom filling onto the pastry pieces, followed by crumbling the goat cheese over the top.
05 -
Fold up the edges of the pastry to form a rustic look. Use the beaten egg to brush along the edges to help them turn beautifully golden.
06 -
Bake for 20-25 minutes until the pastries puff up and turn golden brown.
07 -
Sprinkle some fresh thyme over the top and allow them to cool down just enough before devouring.
