Hazelnut Cake Layers (Print Version)

# Ingredients:

01 - 1 cup honey, sweet and sticky
02 - 2 cups hazelnuts, ground up finely
03 - 1 teaspoon cinnamon powder
04 - 16-20 sheets of phyllo dough
05 - 1/4 teaspoon ground cloves
06 - 1/2 teaspoon cardamom spice

# Instructions:

01 - Preheat your oven to 180°C. Roast the hazelnuts until the aroma fills your kitchen, and their color deepens. Let them cool before blitzing them into a paste.
02 - Brush melted butter across each phyllo layer, then sprinkle with the hazelnut mix between each sheet. Do this till you've used all the dough, keeping it flat.
03 - In a pot, warm honey with water and add a squeeze of lemon. Simmer till it's slightly reduced and thick enough to coat a spoon.
04 - Drizzle the syrup across the stacked phyllo layers and place the dish in the oven heated to 180°C. Cook until crisp and golden through.
05 - Let everything cool down before cutting and serving slices. It pairs beautifully with a cup of mint tea or coffee.
