Grilled Santa Fe Chicken Packs (Print Version)

# Ingredients:

01 - 4 chicken breasts (2-3 pounds total)
02 - 1 tablespoon chili powder
03 - 1 teaspoon salt
04 - 1 teaspoon black pepper
05 - 15 ounces of black beans, drained and rinsed
06 - 2 cups corn (fresh or frozen)
07 - 1 medium bell pepper, seeded and diced
08 - 3/4 cup salsa
09 - 1/2 cup shredded Monterey Jack cheese or Mexican blend

# Instructions:

01 - Preheat the grill to 350°F (medium on gas grills).
02 - Cut 4 large rectangles of foil and spray each with non-stick cooking spray. Place one chicken breast on each piece of foil.
03 - In a small bowl, mix chili powder, salt, and black pepper. Sprinkle the seasoning mixture on both sides of each chicken breast.
04 - Top each chicken breast with black beans, corn, and diced bell pepper. Spoon salsa over the top.
05 - Fold the foil in half over the chicken and vegetables. Twist the edges to create a sealed packet.
06 - Place the foil packets on the grill and cook for 10 minutes. Flip and cook for an additional 10 minutes, or until the chicken's internal temperature reaches 165°F.
07 - Remove the packets from the grill and let cool on a baking sheet for 5 minutes. Carefully open the packets and serve.
