Preheat oven to 350 degrees F. Grease two 8x4-inch loaf pans and set aside.

In medium bowl, whisk together flour, baking soda, and salt. Set aside.

In large bowl, whisk sugar, oil, eggs, and vanilla until well combined.

Add mashed bananas to wet mixture and stir until mixed in.

Fold dry mixture into wet ingredients until blended. Fold in chopped walnuts.

Divide batter between pans. Bake 35-45 minutes until knife comes out clean. Cover with foil if browning too fast.

Cool in pans 10 minutes, then remove to wire rack to cool completely.
