Set your oven to 375°F (190°C) and give a baking tray a quick lining with parchment.

Heat butter and olive oil in a pan, slide in the shallots and soften them for a couple of minutes. Next, stir in the garlic for another minute, then add those mushrooms. Cook everything until the liquid's gone and they’re soft (about 5-7 minutes), then season and let it cool off.

Sprinkle some flour on your counter, roll out the puff pastry sheet, and slice it into squares or rectangles—your call.

On each pastry square, scoop on some of the mushroom mixture, then crumble the goat cheese on top.

Tuck the edges of the pastry over to create rustic shapes. Paint on that egg wash for a golden glow.

Slide the pastries into the oven and bake them for 20-25 minutes, or until they puff up and go golden.
