Herbed Goat Cheese Tarts (Print Version)

# Ingredients:

→ Shells

01 - All-purpose flour for rolling out
02 - 1 beaten egg (for a shiny finish)
03 - 1 puff pastry sheet, defrosted

→ Stuffing

04 - A pinch of fresh thyme for topping
05 - Salt and pepper to your liking
06 - 1 tablespoon of butter
07 - 1 tablespoon of olive oil
08 - 4 ounces goat cheese with herbs
09 - 2 garlic cloves, chopped small
10 - 2 shallots, diced finely
11 - 2 cups of finely diced mushrooms

# Instructions:

01 - Set your oven to 375°F (190°C) and give a baking tray a quick lining with parchment.
02 - Heat butter and olive oil in a pan, slide in the shallots and soften them for a couple of minutes. Next, stir in the garlic for another minute, then add those mushrooms. Cook everything until the liquid's gone and they’re soft (about 5-7 minutes), then season and let it cool off.
03 - Sprinkle some flour on your counter, roll out the puff pastry sheet, and slice it into squares or rectangles—your call.
04 - On each pastry square, scoop on some of the mushroom mixture, then crumble the goat cheese on top.
05 - Tuck the edges of the pastry over to create rustic shapes. Paint on that egg wash for a golden glow.
06 - Slide the pastries into the oven and bake them for 20-25 minutes, or until they puff up and go golden.
07 - Scatter some thyme leaves on top, let the pastries cool just a bit, and then dig in.
