Get three shallow bowls ready—put flour in one, breadcrumbs in another, and Dorito crumbs in the last. In a small bowl, beat the eggs until they're all mixed together.

Start by lightly rolling a cheese stick in flour, then dip it fully into the whisked eggs. Press it into the Dorito crumbs to cover it well. To make it even crunchier, dip it back in the egg and then press more crumbs on.

Place the coated sticks onto a plate and stick them in the freezer for at least 30 minutes. This helps the coating stay put and stops the cheese from oozing out when fried.

In a fryer or a big pot, heat some vegetable oil to 375°F (190°C). Keep an eye on it with a thermometer to hold a steady temp.

Fry a few sticks at a time so the pot doesn’t get crowded. Cook them for 1 to 2 minutes per side until they’re crispy and golden.

Using a slotted spoon, pull out the fried sticks. Lay them on paper towels to soak up any leftover oil.
