Heat oil in a skillet over medium heat.

Add the bologna slices. Fry for 2-3 minutes until golden and curled at the edges.

Flip the bologna and place cheese on top. Cover briefly to melt.

Toast bread separately in a pan or toaster until golden.

Spread mustard on one slice, layer bologna and cheese, and top with the second slice of bread.

Slice in half and serve immediately.
