Set your oven to 350°F (175°C). Pop paper liners into a mini muffin tray.

Grab a bowl and mix flour, sugar, salt, and baking powder until it’s all blended.

In another bowl, stir together melted butter, egg, milk, vanilla, and the cotton candy flavor.

Slowly add the wet mix to the dry one, gently stirring until smooth with no lumps. Don’t stir too much!

Split the batter in half into two bowls. Stir pink food coloring into one and blue into the other until evenly colored.

Pour a bit of each colored batter into cupcake slots, layering them. Use a skewer to swirl the colors gently.

Place in your preheated oven for about 10-12 minutes. They’re done when a toothpick comes out clean. Let them cool a bit in the pan, then move them to a wire rack.

Once cooled, frost with whipped topping and sprinkle with cotton candy pieces if you’d like.
