Turn on the oven to 450°F (230°C) and put your popover pan or muffin tin inside to warm. Whisk the flour, cornmeal, and a bit of salt together in one bowl. In a separate bowl, beat the eggs with the warmed milk until smooth. Combine the two mixtures gradually, mixing until you’ve got a lump-free batter. Finally, stir in the honey and melted butter.

Take the warmed pan out of the oven and grease each spot with melted butter. Fill each cup just over halfway with batter. Put the pan in the oven and bake for 15 minutes at 450°F (230°C). Then lower the heat to 375°F (190°C) and bake for another 15 minutes. Don’t open the oven door while the popovers are baking. Let them cool for a few minutes after pulling the pan out.

Mix the soft butter with honey, finely chopped herbs, and a sprinkle of salt in a bowl. Whip it up till it’s fluffy and blended.
