# Ingredients:

01 - 1 pound lean ground beef (90%).
02 - 1 packet taco seasoning.
03 - ¾ cup enchilada sauce.
04 - 2.5 cups Oaxaca cheese or Mexican cheese blend or Monterey Jack.
05 - 10 corn tortillas.
06 - 1 tablespoon olive oil.
07 - Hot sauce (optional).
08 - Guacamole (optional).
09 - Salsa (optional).
10 - Pickled onions (optional).
11 - Sour cream (optional).
12 - Lime wedges (optional).

# Instructions:

01 - Preheat your oven to 450°F (230°C).
02 - Cook the ground beef in a skillet over medium-high heat until browned. Stir in the taco seasoning and enchilada sauce. Let it simmer briefly, then remove from heat.
03 - Wrap the corn tortillas in a damp paper towel and microwave for 30-60 seconds until they become soft and pliable.
04 - Brush one side of each tortilla with olive oil. Place oiled side down, add 2 tablespoons cheese, ¼ cup beef mixture, and another 2 tablespoons cheese on half of each tortilla. Fold over to create a half-moon shape.
05 - Arrange the filled tacos in a single layer on a baking sheet. Bake for 16 minutes until crispy and golden.
06 - Let the tacos cool for 3 minutes before serving with your choice of toppings.
