Easy Beef Burrito (Print Version)

# Ingredients:

01 - 1 ½ cups of your choice of refried or black beans
02 - 1 small packet (1 ounce) taco seasoning blend
03 - 6 large tortillas (flour, 10-inch)
04 - 1 lb of lean ground beef
05 - 3/4 cup sweet corn kernels
06 - 1 ½ cups shredded cheddar cheese
07 - 3 cups of cooked rice

→ Toppings (Optional)

08 - Chopped tomato or a dollop of salsa
09 - Creamy guacamole or diced avocado
10 - Fresh sprigs of cilantro
11 - A spoonful of sour cream
12 - Crisp shredded lettuce
13 - Tiny pieces of red onion

# Instructions:

01 - Set your oven to 350°F and lightly coat a 9x13-inch dish with nonstick spray.
02 - Brown the ground beef in a pan, mixing in taco seasoning as directed on the packet.
03 - On each tortilla, spread 1/4 cup of beans, then layer 1/2 cup of rice, the seasoned beef, 2 tablespoons of corn, and end with 1/4 cup of cheese.
04 - Tuck the sides inward and roll the tortilla tightly. Place each one seam-side down in the prepared baking dish.
05 - Cover the dish with foil and bake for 25 minutes. If chilled, bake 30-35 minutes to heat completely.

# Notes:

01 - Individually wrapping them in foil lets you freeze them for later.
02 - Bake frozen ones for 45-55 minutes to warm through.
03 - Swap regular rice with microwaveable rice to save on prep.
