Baked Feta Potatoes Dish (Print Version)

# Ingredients:

01 - 2 large baking potatoes
02 - 1 200g block of feta cheese
03 - 2 tablespoons olive oil
04 - 1 teaspoon dried thyme
05 - 1 teaspoon dried oregano
06 - 1 teaspoon salt
07 - 1 teaspoon black pepper
08 - 0.5 teaspoon red chili flakes
09 - 1 head of garlic, top cut off
10 - 1 lemon, quartered
11 - 1 tablespoon honey
12 - 1/4 cup (20g) fresh basil

# Instructions:

01 - Preheat your oven to 200°C (390°F). Wash and cube the potatoes. Add them to a saucepan and cover with water. Bring to a boil, par-boil for 6-8 minutes (but no more than 10 minutes), then drain and steam dry for 2-3 minutes.
02 - Add the potatoes to a baking dish along with thyme, oregano, salt, pepper, and olive oil. Stir to coat evenly, then roast for 30-40 minutes until golden, crispy, and almost cooked.
03 - Add the feta block to the center of the baking dish (optionally coat one side in the seasonings before flipping it over). Squeeze juice from half a lemon over the dish.
04 - Remove the garlic from the dish. Once cooled, squeeze the roasted garlic out of its skins and mash it with the flat of a knife. Set aside.
05 - Return the dish to the oven and roast for an additional 15 minutes.
06 - Stir the mashed garlic and juice from the remaining half lemon into the potatoes along with the fresh basil. Gently mix the roasted potatoes with the melted feta. Drizzle over honey and the shredded basil before serving.

01 - Par-boiling the potatoes before roasting ensures they become extra crispy while remaining fluffy inside.
