Set the temperature to 400°F (200°C). Place parchment paper on a baking tray.

Lay chickpeas on a paper towel and dry them the best you can. The less moisture, the crunchier they'll be!

Put the chickpeas in a bowl. Mix them up with olive oil, salt, pepper, garlic powder, smoked paprika, and cayenne if you'd like a kick.

Pour the chickpeas onto the tray in one even layer. Bake for 25–30 minutes, shaking the tray about halfway through. They'll come out golden and crunchy.

Let them sit for 5 minutes after removing from the oven. This helps them crisp up even more as they cool.
