Crispy Spicy Shrimp (Print Version)

# Ingredients:

→ Shrimp

01 - 1 pound of medium-sized shrimp—peeled and cleaned (around 25 pieces)
02 - A sprinkle of kosher salt and a dash of fresh black pepper
03 - Half a cup of cornstarch
04 - 2 big eggs, whisked up
05 - 1/4 cup of canola oil for frying

→ Sauce

06 - 1/2 cup of sweet chili sauce with garlic
07 - 3 tablespoons of freshly squeezed lemon juice
08 - 2 spoons of honey
09 - Zest from 1-2 lemons, adjust to taste
10 - 1/2 teaspoon of Sriracha (add more if you want it spicy)
11 - 1/2 teaspoon of grated fresh ginger
12 - 1/2 teaspoon of garlic salt

# Instructions:

01 - Pour canola oil into a large pot and warm it up over medium-high heat.
02 - Sprinkle salt and pepper over shrimp first. Coat each piece with cornstarch and then dip in eggs right before cooking.
03 - Fry shrimp in small groups of 4-6 for about 2-3 minutes until they’re golden. Let them rest on paper towels to drain.
04 - Mix all the sauce ingredients in a clean pan. Bring it to a quick boil over medium-high heat for a couple of minutes.
05 - Toss the fried shrimp in the sauce so they're coated well. Enjoy with some veggies or rice right away.

# Notes:

01 - Tastes best right away while still crispy.
02 - Adjust spice by adding or reducing Sriracha.
03 - Look for sweet chili garlic sauce in the international food section at your store.
