Trim off ends, peel, and slice into rings about 1/4 inch thick. Separate them apart gently.

Combine flour, cornstarch, salt, and pepper in the first dish. Whisk eggs with milk into another. Fill the last dish with panko crumbs.

Coat rings in the flour combo, move to the eggs and milk mix, and finish with panko, pressing crumbs to make it stick well.

Lightly spray both the basket and the rings. Fry at 350°F for 5 minutes, flip them, then cook another 5 minutes.

Blend mayo and ketchup in a tiny bowl until smooth.

Toss on parsley if you like that. Serve hot with dipping sauce.
