Crispy Onion Rings (Print Version)

# Ingredients:

01 - About 3 medium yellow sweet onions.
02 - A single cup of plain flour.
03 - 2 spoonfuls of cornstarch.
04 - 1 small spoon of salt.
05 - 1 small spoon of ground black pepper.
06 - Three big eggs.
07 - 3/4 cup of milk—any type works.
08 - 4 cups of crispy panko crumbs.
09 - Nonstick cooking spray.
10 - Optional: a handful of parsley, chopped up for extra color.
11 - 1/3 cup of mayo.
12 - 2 spoonfuls of ketchup.

# Instructions:

01 - Trim off ends, peel, and slice into rings about 1/4 inch thick. Separate them apart gently.
02 - Combine flour, cornstarch, salt, and pepper in the first dish. Whisk eggs with milk into another. Fill the last dish with panko crumbs.
03 - Coat rings in the flour combo, move to the eggs and milk mix, and finish with panko, pressing crumbs to make it stick well.
04 - Lightly spray both the basket and the rings. Fry at 350°F for 5 minutes, flip them, then cook another 5 minutes.
05 - Blend mayo and ketchup in a tiny bowl until smooth.
06 - Toss on parsley if you like that. Serve hot with dipping sauce.

# Notes:

01 - If you’re doing multiple batches, keep rings warm in a 200°F oven.
02 - For chunkier rings, slice thicker—about 1/2 inch works nicely.
