Use the coarse side of a box grater to shred the potatoes after peeling them.

Put the shredded potatoes in a bowl filled with cold water. Swish them around, drain, and repeat until the water's no longer cloudy.

Lay the potato shreds on some paper towels and press them to soak up any water.

In a large bowl, combine the potatoes with salt, paprika, garlic powder, and pepper.

Spritz the air fryer basket with cooking spray.

Put the potato shreds in the fryer basket. Spray the top lightly with oil and cook at 350°F for 8 minutes.

Take out the fryer basket, gently stir the potatoes, and break up any clumps.

Return the basket and fry for another 6-8 minutes until they’re extra crispy.

Transfer the crispy browned potatoes to a plate, sprinkle with parsley or chives, and enjoy alongside eggs or whatever you like.
