Slice potatoes into strips about 1/4-1/2 inch wide, pop them in icy water, and soak between 1 and 24 hours.

Run your air fryer at 390°F for around 15 minutes to warm it up.

Dry the potatoes completely, then mix them with oil, pepper, rosemary, and salt.

Air fry for 10 minutes, shaking them up halfway through to even things out.

Fry for another 10-12 minutes until crispy, pulling out any that are darker than you'd like.

Cool them for a moment, then tweak the seasoning if you think it needs it.
