Crispy Fish Sticks (Print Version)

# Ingredients:

01 - Non-stick spray.
02 - 1 pound of cod, sliced into roughly 3-inch strips.
03 - 1/2 cup of cornstarch.
04 - 1/2 teaspoon of salt, plus extra for sprinkling.
05 - 1/2 teaspoon of black pepper.
06 - 2 eggs, large.
07 - 1 cup of panko crumbs.
08 - 1 teaspoon of paprika powder.
09 - 1/2 cup of mayonnaise.
10 - 1 tablespoon of lemon juice, freshly squeezed.
11 - 1/4 cup of pickles, finely diced.
12 - 2 tablespoons of capers.
13 - 1/8 teaspoon of salt, optional.
14 - Chopped fresh dill or parsley, if you want.

# Instructions:

01 - Spray the basket of your air fryer lightly with oil to stop sticking.
02 - In one bowl, combine the cornstarch, pepper, and salt. Use a second bowl for whisked eggs, and in a third mix the panko with paprika.
03 - Coat each cod strip by dipping first in cornstarch, then egg, and finish with the panko mix. Make sure it’s well-covered all around.
04 - Put the coated fish pieces into your air fryer basket. Mist them with a bit of oil. Cook at 375°F for 6 minutes, turn them, and fry for another 4-6 minutes until crispy and browned.
05 - Mix mayonnaise with lemon juice, diced pickles, capers, and a pinch of salt. Stir well to blend everything.
06 - If you like, sprinkle some herbs on top of the fish. Serve them hot alongside your homemade sauce and a few lemon slices.

# Notes:

01 - To keep the cooked fish warm, pop them in a 250°F oven while finishing other batches.
02 - Store leftovers in the fridge for a few days and heat them up in the air fryer at 350°F for about 3 minutes.
