Get a baking tray ready with wax paper on it. Crack the egg into one bowl and whisk it. In another bowl, stir together breadcrumbs, salt, and Italian herbs.

Roll each stick in the egg, then coat it with breadcrumbs. Put them onto the prepared tray. Pop them in the freezer for at least half an hour or so.

Coat the sticks again using the egg and breadcrumbs. Freeze them once more for at least another 30 minutes.

Set your air fryer to 390°F. Spray both the fryer basket and the sticks. Cook the sticks for about 6-8 minutes until crisp and golden all over.

Give them a moment to cool slightly, then enjoy while the cheese inside is still melted.
