Set your oven temperature to 375°F (190°C) so it cooks evenly.

Tuck a slice of pepperoni into the bottom of each muffin tin cup.

Mix the shredded cheddar and mozzarella. Gently press a bit of the mix onto each pepperoni slice, keeping it off the edges.

Pop it into the oven for around 8 minutes, or until the edges are browned and crispy.

Leave them in the tin for 5 minutes so they firm up and are easier to handle.
