Crispy Air Fryer Falafel (Print Version)

# Ingredients:

01 - 1 large shallot, chopped roughly.
02 - 1 teaspoon paprika powder.
03 - Juice squeezed from 1 lemon.
04 - 1/2 cup of fresh herb mix (cilantro and parsley).
05 - Hot water, add as needed.
06 - 2 teaspoons of ground cumin.
07 - 4 tablespoons of olive oil.
08 - 1 tomato, sliced thinly.
09 - 2 cans drained chickpeas.
10 - 1/2 cup plain Greek yogurt.
11 - Lettuce leaves.
12 - 6 pita flatbreads.
13 - 1 cucumber, sliced into rounds.
14 - 2 tablespoons sesame seeds.
15 - 3 tablespoons regular flour.
16 - 2 peeled garlic cloves.
17 - 1/2 red onion, slice thinly.
18 - 1 cup tahini paste.
19 - 1 teaspoon salt for seasoning.
20 - A light cooking spray.

# Instructions:

01 - In a bowl, combine the tahini, yogurt, olive oil, and lemon juice. Add a bit of hot water at a time until it’s the right texture to spread.
02 - Toss the chickpeas, herbs, garlic, shallot, flour, sesame seeds, spices, salt, and lemon juice into a food processor. Grind until it comes together as a coarse mix.
03 - Take the mixture and shape it into small discs about an inch wide. You’ll get anywhere from 25-30 pieces.
04 - Spray oil lightly into the air fryer basket. Place falafel discs inside, leaving a gap between them. Cook at 350°F for 8 minutes, flip them over, then cook again for another 6 minutes.
05 - Pop pita bread in the microwave for 15 seconds to warm. Load them up with falafel, your sauce, and fresh veggies like lettuce, cucumber, and tomato.

# Notes:

01 - To deep fry, roll falafel into round balls and fry in 350°F oil for about 4 minutes until they turn golden.
02 - Prefer pan frying? Heat an inch of oil in a cast iron pan. Cook discs on medium-high for 3-4 minutes per side.
