Creamy Celery Dish (Print Version)

# Ingredients:

01 - 3 tbsp butter, split into portions.
02 - 1 cup finely chopped onion.
03 - 1½ cups sliced leeks, using light green and white sections.
04 - 6½ cups celery, chopped and separated.
05 - 2 minced garlic cloves.
06 - 4 cups of chicken broth.
07 - 2 whole bay leaves.
08 - 1½ tsp kosher salt, adjust to taste.
09 - ⅓ cup heavy cream.
10 - Freshly ground black pepper, to suit your taste.
11 - Chopped parsley or chives for decorating.

# Instructions:

01 - Cook onion, leeks, and 5 cups of celery in 2 tbsp of melted butter for about 10 minutes. Toss in the garlic and warm it for a minute longer.
02 - Pour in chicken broth, bay leaves, and salt. Bring to a boil before lowering heat, covering, and simmering for 15 minutes.
03 - In another pan, soften the last of the celery in 1 tbsp butter with ½ cup of hot broth for 5-6 minutes.
04 - Take out the bay leaves. Blend everything into a creamy soup using either a handheld or a regular blender in parts.
05 - Mix in cream along with your braised celery, then add salt and pepper if needed. Sprinkle with herbs before serving.

# Notes:

01 - Make sure the celery is fresh and crispy.
02 - Skip any celery that's gone bitter or wilted.
03 - Tweak the amount of salt according to the broth you're using.
