Get an 8-inch pan ready by lining it with parchment paper. Give it a quick spray with non-stick cooking spray, then heat up the oven to 350°F (175°C).

Grab a medium bowl and whisk together the almond milk, applesauce, vanilla, and egg until the mix looks smooth and combined.

In another bowl, blend the almond flour, oat flour, sweetener, baking powder, and salt.

Little by little, mix the dry stuff into the wet mix. Stir gently until you’ve got a smooth batter.

Toss in the cranberries and white chocolate chips, then fold them into the batter.

Spread the batter evenly into your pan. Pop it in the oven and bake for 25 to 30 minutes. You’ll know it’s done when a toothpick comes out clean from the center.
