Cranberry Bars Less Sugar (Print Version)

# Ingredients:

01 - 1 large egg
02 - 1/4 cup unsweetened almond milk
03 - 1/4 cup unsweetened applesauce
04 - 1/2 cup oat flour
05 - 1 cup almond flour
06 - 1 teaspoon vanilla extract
07 - 1/3 cup monk fruit sweetener
08 - 1/4 teaspoon salt
09 - 1 teaspoon baking powder
10 - 1/4 cup Lily's white chocolate chips
11 - 1/2 cup low-sugar dried cranberries

# Instructions:

01 - Get an 8-inch pan ready by lining it with parchment paper. Give it a quick spray with non-stick cooking spray, then heat up the oven to 350°F (175°C).
02 - Grab a medium bowl and whisk together the almond milk, applesauce, vanilla, and egg until the mix looks smooth and combined.
03 - In another bowl, blend the almond flour, oat flour, sweetener, baking powder, and salt.
04 - Little by little, mix the dry stuff into the wet mix. Stir gently until you’ve got a smooth batter.
05 - Toss in the cranberries and white chocolate chips, then fold them into the batter.
06 - Spread the batter evenly into your pan. Pop it in the oven and bake for 25 to 30 minutes. You’ll know it’s done when a toothpick comes out clean from the center.
07 - Let the bars cool all the way down in the pan. Once cool, cut them into pieces and enjoy.
