01 - 1 cup unsalted butter, room temperature
02 - 1/2 cup powdered sugar
03 - 1/2 tablespoon vanilla extract
04 - 2 cups all-purpose flour
05 - 1/2 teaspoon salt
06 - 3/4 cup maraschino cherries, chopped and well-drained
07 - 2/3 cup chocolate chips

# Instructions:

01 - Beat softened butter with powdered sugar and vanilla extract in a mixer until light and fluffy.
02 - Mix flour and salt in a separate bowl, then sift into the butter mixture and knead into a dough.
03 - Add the chopped maraschino cherries and chocolate chips into the dough and mix thoroughly.
04 - Transfer the dough onto cling film, shape into a log, press well to avoid air pockets, wrap tightly, and refrigerate for at least 1 hour or overnight.
05 - Preheat the oven to 325°F (160°C). Remove the dough log from the refrigerator and slice into rounds about 1/4 to 1/3 inch thick.
06 - Place sliced cookies on a baking sheet lined with parchment paper, spaced an inch apart, and bake for 15 minutes or until golden brown.
07 - Allow cookies to cool completely on the baking sheet before transferring to a serving plate.

# Notes:

01 - Keep the dough refrigerated before slicing to maintain its structure and prevent spreading during baking.
02 - If the dough crumbles while slicing, gently press it back together with your fingers.
03 - Use small chocolate chips for easier slicing of the dough into rounds.
