Sweet Chili Salmon (Print Version)

# Ingredients:

01 - 1 1/2 lbs salmon fillet, center-cut.
02 - 1/2 cup sweet Thai chili sauce.
03 - 1 tablespoon minced ginger, fresh.
04 - 1 teaspoon Sriracha or similar hot sauce.
05 - 2 teaspoons soy sauce.
06 - 2 tablespoons lime, freshly squeezed.
07 - 1 bunch scallions, chopped fine.
08 - Pinch of black pepper (about 1/8 tsp).
09 - 1/2 tsp kosher salt.
10 - 1 lime, sliced into wedges.
11 - 2-3 sprigs each of fresh mint and cilantro.
12 - 1 tablespoon olive oil for the greens.
13 - 2-3 handfuls of mixed baby greens.
14 - 1 tablespoon lime juice to dress greens.

# Instructions:

01 - Stir together chili sauce, Sriracha, soy sauce, lime juice, ginger, and half the scallions.
02 - Remove any pin bones, lightly season with salt and black pepper, then put in a baking dish with 1/3 cup of glaze underneath and a coating on top.
03 - Bake gently at 275°F for roughly 18-23 minutes until it reaches an internal temp of 130°F.
04 - Toss your salad greens with lime juice, olive oil, and a bit of salt and pepper.
05 - Lay the cooked salmon on top of the greens, garnish with herbs, the rest of the scallions, and lime wedges.

# Notes:

01 - You can prep the dish up to 2 hours in advance.
02 - For best results, choose a center-cut piece.
03 - The temperature will rise slightly after removing from heat.
