Preheat oven to 400°F. Line baking sheet with foil and place rack on top if using. Spray rack or foil with cooking spray.

Mix flour, paprika, garlic powder, salt and pepper in first shallow dish.

Whisk eggs and milk together in second shallow dish.

Combine panko breadcrumbs with both cheeses in third shallow dish.

Season chicken tenders with kosher salt on all sides.

Dredge each tender in flour mixture, then egg mixture, then press into cheese-panko mixture. Place on prepared baking sheet.

Bake at 400°F for 15-20 minutes until golden brown. Flip halfway if not using rack. Optional: broil briefly for extra browning.
