Classic Chicken Parm (Print Version)

# Ingredients:

01 - 3 tablespoons olive oil.
02 - 1 small yellow onion, chopped.
03 - 6 garlic cloves, chopped.
04 - 28 oz crushed tomatoes.
05 - 2 large basil sprigs.
06 - Salt and pepper.
07 - 1 cup panko breadcrumbs.
08 - 1 teaspoon garlic powder.
09 - 2 cups Parmesan, divided.
10 - 3/4 cup all-purpose flour.
11 - 2 large eggs.
12 - 6 chicken cutlets (1.5 lbs).
13 - 1 cup shredded mozzarella.
14 - 1 cup vegetable oil.
15 - Fresh basil for serving.

# Instructions:

01 - Sauté onion and garlic in oil until soft. Add tomatoes and basil, simmer 30 minutes until thickened.
02 - Mix panko, garlic powder and 1 cup Parmesan in shallow bowl. Set up breading station with flour and beaten eggs in separate bowls.
03 - Season chicken with salt and pepper, then dredge in flour, egg, and panko.
04 - Heat oil to 350°F in heavy pot. Fry chicken 1 minute per side until golden.
05 - Top with marinara and combined cheeses. Broil until cheese melts and browns.
06 - Garnish with fresh basil and serve with extra sauce.
