Cheesy Zucchini Bites (Print Version)

# Ingredients:

01 - 1-2 tablespoons olive oil
02 - 2 medium zucchini, chopped small
03 - 1 clove garlic, minced
04 - ¼ cup water
05 - ¾ cup shredded firm mozzarella
06 - 2 tablespoons freshly grated parmesan cheese
07 - 1 large egg
08 - ¼ cup + 2 tablespoons bread crumbs (45 grams total)
09 - 1-2 tablespoons fresh chopped Italian parsley
10 - ¼ teaspoon salt
11 - 1-2 dashes pepper

12 - ¼ cup bread crumbs or panko bread crumbs

# Instructions:

01 - In a medium frying pan, add olive oil, chopped zucchini, minced garlic, salt, and water. Cook covered on medium-low heat for approximately 10-15 minutes until zucchini is tender but not browned. Remove the cover and continue cooking on low heat until the water has evaporated.
02 - Transfer the cooked zucchini to a large bowl and mash with a fork. Add shredded mozzarella, parmesan cheese, egg, bread crumbs, parsley, and pepper. Combine gently until mixture is compact.
03 - Form the mixture into 19 balls, then roll each ball in the extra bread crumbs. Place on a plate, cover with plastic wrap, and refrigerate for at least an hour.
04 - Remove the zucchini bites from the refrigerator. Cook by deep frying in hot oil (350°F / 180°C) until golden, pan frying in a little hot oil (turning once or twice until golden), or baking in a preheated oven at 350°F / 180°C for approximately 25-30 minutes, turning halfway through.
05 - Sprinkle the cooked bites with a little salt before serving. Enjoy.
