Set your oven to 350°F while greasing a 9x13 dish so nothing sticks.

Cook minced shallot in a lightly oiled pan until it's soft and slightly browned, about 2–3 minutes.

In a small bowl, stir all glaze ingredients until smooth and set aside for later.

In a big bowl, toss together the turkey, breadcrumbs, mushrooms, shallot, ketchup, eggs, salt, and marjoram.

Using your hands, gently but thoroughly blend everything until the mixture is even.

On parchment paper, pat the meat mixture flat into a roughly 10x12 inch rectangle.

Spread the shredded cheese over the surface of the meat evenly.

Scatter the spinach evenly on top of the cheese layer.

Starting from one short side, roll the meat mixture up gently, peeling back the parchment paper as you go.

Pinch the ends to seal the roll, then place it seam-side down in your greased dish.

Pop it in the oven, uncovered, and bake for about 45 minutes.

Take it out and brush the prepared glaze all over the loaf.

Put it back in the oven for 10–15 minutes until it's cooked fully.

Let it sit 10 minutes so it's easier to slice into 16 pieces.
