Stuffed Turkey Meatloaf (Print Version)

# Ingredients:

01 - 2 tablespoons ketchup for the glaze.
02 - 1 teaspoon brown sugar for the glaze.
03 - 1 1/2 teaspoons Dijon mustard for the glaze.
04 - 2 teaspoons Worcestershire sauce for the glaze.
05 - 2 large eggs.
06 - 1 cup reduced-fat cheddar.
07 - 1 1/4 teaspoon kosher salt.
08 - 1 teaspoon marjoram.
09 - 3/4 cup seasoned breadcrumbs.
10 - 2/3 cup chopped mushrooms.
11 - 1 large shallot, minced.
12 - 2 pounds lean ground turkey.
13 - 1 oz fresh spinach, chopped.
14 - 1/3 cup ketchup.

# Instructions:

01 - Set your oven to 350°F while greasing a 9x13 dish so nothing sticks.
02 - Cook minced shallot in a lightly oiled pan until it's soft and slightly browned, about 2–3 minutes.
03 - In a small bowl, stir all glaze ingredients until smooth and set aside for later.
04 - In a big bowl, toss together the turkey, breadcrumbs, mushrooms, shallot, ketchup, eggs, salt, and marjoram.
05 - Using your hands, gently but thoroughly blend everything until the mixture is even.
06 - On parchment paper, pat the meat mixture flat into a roughly 10x12 inch rectangle.
07 - Spread the shredded cheese over the surface of the meat evenly.
08 - Scatter the spinach evenly on top of the cheese layer.
09 - Starting from one short side, roll the meat mixture up gently, peeling back the parchment paper as you go.
10 - Pinch the ends to seal the roll, then place it seam-side down in your greased dish.
11 - Pop it in the oven, uncovered, and bake for about 45 minutes.
12 - Take it out and brush the prepared glaze all over the loaf.
13 - Put it back in the oven for 10–15 minutes until it's cooked fully.
14 - Let it sit 10 minutes so it's easier to slice into 16 pieces.
15 - Slice it up with a sharp knife and serve hot!
