Cheesy Spinach Egg Bake (Print Version)

# Ingredients:

01 - 12 big eggs.
02 - 18 oz of full-fat cottage cheese (4%).
03 - One cup of whole milk.
04 - Half a cup of grated Parmesan cheese, split.
05 - A pinch of salt (about 1/4 teaspoon).
06 - 1/4 teaspoon ground black pepper.
07 - Three cups of chopped baby spinach.
08 - Non-stick cooking spray.

# Instructions:

01 - Set the oven to 375°F. Coat a 9x13 pan lightly with cooking spray.
02 - In a big bowl, beat the eggs. Add in the milk, cottage cheese, most of the Parmesan, pepper, and salt. Stir everything together till smooth.
03 - Fold in the spinach so it's mixed thoroughly.
04 - Pour the mixture into the prepared pan. Sprinkle the rest of the Parmesan over it. Bake in the oven for 35 minutes, uncovered, until it's fully cooked and firm.
05 - Cool for 20 minutes before dividing into 8 pieces. Eat warm or save and eat cold.

# Notes:

01 - You can prepare it ahead and keep it for two days unbaked.
02 - Keeps great in the freezer for up to three months.
03 - Feel free to use 3 cups of egg whites instead of whole eggs.
