Cheesy Garlic Shrimp (Print Version)

01 - 1 cup mozzarella, shredded
02 - 1 cup heavy cream
03 - ½ cup Parmesan, grated
04 - 1 pound peeled and cleaned medium shrimp
05 - 3 tablespoons butter, unsalted
06 - ½ cup breadcrumbs, panko-style
07 - 4 garlic cloves, finely chopped
08 - Chopped fresh parsley (for sprinkling on top)
09 - Pinch of salt, or as preferred
10 - Black pepper to your taste

# Instructions:

01 - Crank up your oven to 375°F (190°C) and let it heat up.
02 - Heat a pan on medium, toss in the butter, and once melted, add the garlic. Stir for around a minute till it smells amazing.
03 - Throw the shrimp into the pan, season them lightly with salt and pepper, and cook until they turn a solid pink (about 3-4 minutes). Take the skillet off the heat.
04 - In a bowl, stir together the cooked shrimp, cream, mozzarella, and half the Parmesan. Give it a good mix.
05 - Coat a 9×9 inch baking dish lightly with oil or butter, then spread the shrimp mixture across the bottom.
06 - In a different bowl, stir together the breadcrumbs and the Parmesan that’s left. Shake this over the shrimp mixture evenly.
07 - Pop it into the oven for 20-25 minutes. Pull it out when the top’s golden and bubbling.
08 - Once out of the oven, give it a few minutes to cool. Sprinkle chopped parsley over the top right before serving.

# Notes:

01 - You could sprinkle a pinch of paprika or chili flakes for heat, or fold in ingredients like spinach or roasted peppers for a spin.
