In a small container, stir together warm water, sugar, and yeast. Wait 5-10 minutes until a foamy layer forms. Grab a mixing bowl and combine flour with salt. Add the yeast mixture and olive oil into the dry mix. Mix until a dough starts forming. Knead this dough either with your hands on a floured table for 5-7 minutes or with a stand mixer using a dough hook. Cover with a damp cloth, and let it sit for 15 minutes.

Set your oven to 375°F (190°C) and get a baking sheet ready by greasing it or putting parchment paper on top. Spread the dough out into a rectangle, about 9×13 inches in size, on a floured counter. Cut it into 12 even strips using a knife or pizza slicer.

Place those strips onto your ready-to-go baking tray. Brush their tops with melted butter. If you like garlic, sprinkle on some garlic powder. Cover each strip generously with shredded mozzarella and grated parmesan. Add an optional sprinkle of Italian seasoning or oregano to pack in extra flavor.

Pop the breadsticks into your preheated oven and bake them for around 20-25 minutes, or until you see a golden color and bubbly cheese on top. Once out, cool for a bit before serving them up.
