Carrot Cheesecake Bars (Print Version)

# Ingredients:

→ Carrot Cake Portion

01 - 1 1/2 cups plain flour
02 - 1/2 teaspoon baking powder
03 - 1/4 teaspoon salt
04 - 1 1/2 teaspoons cinnamon powder
05 - 1/2 teaspoon nutmeg powder
06 - 1 teaspoon baking soda
07 - 1/2 cup olive oil or any vegetable oil
08 - 1/2 cup brown sugar, packed
09 - 1/2 cup white sugar
10 - 2 eggs, large
11 - 1 teaspoon vanilla essence
12 - 1 cup carrots, finely shredded

→ Cream Cheese Portion

13 - 8 oz plain cream cheese, softened to room temp
14 - 1/2 cup regular sugar
15 - 1 egg, large
16 - 1 teaspoon vanilla essence

# Instructions:

01 - Set oven to 350°F. Lay parchment in 9x9 pan.
02 - Mix sugars with oil. Add vanilla and eggs. Stir all dry ingredients separately. Gently blend both mixtures together, add carrots last.
03 - Combine cream cheese, sugar, vanilla, and egg. Mix until creamy and lump-free.
04 - Pour half the carrot cake mix, then most of the cheesecake mix over it. Add the leftover carrot cake mixture, drizzle the last bit of cheesecake, and create swirls.
05 - Cook for about 30-35 minutes, checking with a toothpick. If edges are darkening, tent foil on top for the last 5-10 minutes.
