Spicy Cajun Rice with Sausage (Print Version)

# Ingredients:

→ Main Components

01 - 14 ounces andouille sausage, cut into 1/4 inch rounds
02 - 1 tablespoon cooking oil
03 - 1 red bell pepper, sliced
04 - 1 green bell pepper, sliced
05 - 1/2 yellow onion, diced
06 - 3 cloves garlic, minced

→ Rice and Seasonings

07 - 1 tablespoon Cajun Seasoning
08 - 10 ounce can diced tomatoes with green chilies
09 - 1 cup long grain white rice
10 - 1 1/2 cups chicken broth
11 - Green onions, sliced for garnish

# Instructions:

01 - Heat oil in large, deep skillet over medium-high heat. Sauté andouille sausage for 3-5 minutes until browned
02 - Add bell peppers and onion, sauté for 5 minutes until tender and browned
03 - Stir in garlic and Cajun seasoning, cook 1-2 minutes until fragrant
04 - Add tomatoes, rice, and broth. Bring to boil, then cover, reduce heat and simmer 20 minutes until rice absorbs liquid
05 - Remove from heat, let rest covered 5 minutes. Fluff rice, garnish with green onions and serve

01 - Stores in fridge up to 4 days
02 - Can use kielbasa instead of andouille
03 - Add jalapeño for extra spice
