Cabbage Casserole Creamy Crust (Print Version)

01 - 1 small head green cabbage
02 - 1 medium Vidalia onion, chopped
03 - 8 tablespoons butter
04 - Salt, to taste
05 - Pepper, to taste
06 - 1 (10-ounce) can condensed cream of chicken or cream of mushroom soup
07 - 1/3 cup mayonnaise

08 - 3 tablespoons melted butter
09 - 1 cup shredded sharp cheddar cheese
10 - 1 sleeve Ritz crackers (about 30), coarsely crushed

# Instructions:

01 - Preheat oven to 350°F (175°C). Lightly grease a 2-quart casserole dish.
02 - Coarsely chop the cabbage. Melt butter in a large nonstick pan. Add cabbage and onion and cook for 8 to 10 minutes, stirring frequently, or until partially cooked down.
03 - Season the cabbage and onion mixture with salt and pepper to taste.
04 - Transfer the cabbage mixture to the prepared casserole dish.
05 - In a small bowl, stir together the condensed soup and mayonnaise. Spread this mixture evenly over the cabbage.
06 - In a bowl, mix together the melted butter, shredded cheddar cheese, and crushed Ritz crackers.
07 - Sprinkle the prepared topping mixture evenly over the casserole.
08 - Bake for 30 minutes or until the topping is browned.
09 - Remove from oven, let cool slightly, and serve warm.

01 - For added flavor, you can use cream of mushroom soup instead of cream of chicken.
