Blueberry Banana Bread (Print Version)

# Ingredients:

01 - ¾ cup (150g) granulated sugar
02 - 2 large eggs, room temperature
03 - 1 teaspoon vanilla extract
04 - 2 cups (250g) all-purpose flour
05 - 3 tablespoons vegetable oil
06 - 1½ cups (222g) fresh blueberries, divided
07 - ¾ teaspoon baking soda
08 - 4 large ripe bananas, mashed (about 2 cups)
09 - 3 tablespoons unsalted butter, melted
10 - ¼ cup (57.5g) sour cream, room temperature
11 - ½ teaspoon kosher salt

# Instructions:

01 - Set your oven to 350°F and get your 9x5-inch pan ready with parchment and a spritz of cooking spray.
02 - In a big bowl, stir the flour, sugar, kosher salt, and baking soda until combined.
03 - Mash up the bananas in a new bowl. Mix in sour cream, vanilla, melted butter, eggs, and the oil.
04 - Pour the dry mix into the banana one. Gently fold 1 cup of blueberries into the batter.
05 - Pour the mix into the pan, sprinkle the rest of the blueberries on top. Bake for 75-78 minutes, or until a toothpick comes out with just a few moist crumbs.
06 - Let the loaf rest in the pan for 20 minutes, then move it out to cool down completely.

# Notes:

01 - It's best to use eggs and other ingredients at room temperature.
02 - Parchment paper makes lifting the loaf out of the pan super easy.
