Blackberry Crumb Bars (Print Version)

# Ingredients:

→ Crust

01 - ¾ cup brown sugar
02 - 1 cup unsalted butter, melted
03 - 3 cups all-purpose flour
04 - 1 tsp baking powder
05 - ½ cup granulated sugar
06 - ½ tsp cinnamon
07 - 2 large eggs
08 - 1 tsp almond extract

→ Filling

09 - 1½ Tbsp cornstarch
10 - 4 cups blackberries, fresh or frozen
11 - ¼ cup granulated sugar
12 - 1 Tbsp lemon juice

# Instructions:

01 - Set your oven to 375°F. Grease a 9"x13" pan with spray, then line the bottom with parchment paper.
02 - Stir together the melted butter, flour, cinnamon, baking powder, both sugars, eggs, and almond extract until it's all combined.
03 - Set aside 1½ cups of the crust mix. Press the rest into the prepared pan to form the base.
04 - In a small bowl, mix cornstarch, sugar, and lemon juice. Carefully coat the blackberries in the mix, then spread it across the base.
05 - Sprinkle the reserved crust mix evenly over the filling. Bake for 40-45 minutes, or until it's nicely golden. Let it cool completely before cutting it into pieces.

# Notes:

01 - Both frozen and fresh blackberries work fine
02 - Chunky crumbles give the best texture on top
