Crispy Belgian Waffles (Print Version)

# Ingredients:

→ Dry Items

01 - 1 teaspoon cinnamon
02 - 1/2 teaspoon salt
03 - 3 tablespoons sugar
04 - 1 tablespoon baking powder
05 - 2 1/4 cups plain flour

→ Wet Items

06 - 1 teaspoon vanilla
07 - 2 cups milk
08 - 1/2 cup cooking oil
09 - 2 large eggs, whites and yolks separated

# Instructions:

01 - Get your waffle iron hot, spray it with cooking spray, then set it aside for now.
02 - In a big bowl, toss together the cinnamon, salt, sugar, flour, and baking powder using a whisk.
03 - Take a medium bowl and use a hand mixer to whip the egg whites until you see stiff peaks form. Set it aside.
04 - In another medium bowl, combine milk, vanilla, oil, and egg yolks. Give it a good stir until it's all blended.
05 - Pour the wet mix into the dry mix, stirring it until just combined.
06 - Carefully fold in the egg whites, keeping the batter fluffy. Some lumps are totally fine.
07 - Spoon some batter onto your hot waffle maker and cook based on your machine's instructions.
08 - Dish out the waffles right away with toppings like butter, syrup, powdered sugar, or whatever you love.

# Notes:

01 - Don't overmix the batter! Leaving lumps helps your waffles stay airy and light.
02 - To crisp up leftover waffles, pop them on a 120°C oven rack for roughly 10 minutes.
