19 - Cut 1 lime into wedges to serve on the side.
20 - 1 tsp of fish sauce (only if you like it).
21 - Throw in 2 tbsp of crushed peanuts on top as garnish.

# Instructions:

01 - Get all your ingredients ready. Cut beef into strips, grate ginger, mince garlic, and chop your veggies. Keep them close for easy use.
02 - Boil water in a pot. Cook the noodles following the package guide, then drain and cool them under cold water. Set aside.
03 - Mix hoisin sauce, soy sauce, garlic, and ginger in a bowl. Let the beef sit in the marinade for at least 15 minutes.
04 - Pour 1 tbsp of oil into a large pan or wok and heat it over medium-high. Stir-fry the carrot, bell peppers, or other veggies for 3-4 minutes until they soften a bit.
05 - Move the veggies to one side of the pan. Add the remaining oil, toss in the marinated beef, and stir-fry until it’s browned and cooked through (5-7 minutes).
06 - Mix the cooked noodles and leftover marinade into the skillet. Stir it all together so the noodles are coated. Add green onions and cook for 2 extra minutes.
07 - If you're using sesame oil, drizzle it on top and stir. Garnish with sesame seeds, cilantro, or chili flakes (optional), then serve.

# Notes:

01 - To keep the beef tender and veggies crisp, use high heat and don't overcrowd the pan.
