Ground Beef Quesadillas (Print Version)

# Ingredients:

01 - 3 cups of shredded cheese.
02 - 1/2 teaspoon of black pepper.
03 - 8 big flour tortillas.
04 - 1 small onion, chopped finely.
05 - 1 teaspoon of ground chili powder.
06 - 1 medium red bell pepper, diced small.
07 - 1/4 cup of water or beef broth.
08 - 2 tablespoons of olive oil.
09 - 1/4 teaspoon of salt.
10 - 1 teaspoon cumin powder.
11 - 2 cloves of finely minced garlic.
12 - 2 tablespoons of tomato paste.
13 - 1 small jalapeño, diced and seeds removed.
14 - 1/2 teaspoon of oregano, dried.
15 - 1 teaspoon of smoked paprika.
16 - 1 pound ground beef.

# Instructions:

01 - In a skillet, heat oil and sauté onion with ground beef until browned.
02 - Stir in garlic, jalapeño, and bell pepper. Let it cook for 3-4 minutes. Sprinkle in the seasonings, stirring for another minute.
03 - Mix in tomato paste and pour in water or broth. Simmer on low for 3 to 5 minutes until it thickens.
04 - Spread the cheese and beef filling onto one side of a tortilla, then fold it in half.
05 - Place quesadillas in a skillet and cook 2-3 minutes on each side until crispy and cheese is gooey.
06 - Let it sit for a few minutes before cutting. Add your favorite toppings before eating.

02 - Use medium heat for better cooking control.
03 - Hold cooked quesadillas in a 200°F oven to keep warm.
