Coat the inside of your slow cooker with a nonstick cooking spray.

In a skillet over medium heat, cook the ground beef thoroughly until browned. Get rid of any extra grease.

Stir in taco seasoning with water as directed on the package. Let it cook until the liquid has disappeared.

Put the seasoned beef, Velveeta cubes, and drained tomatoes with green chiles into the slow cooker.

Mix everything together, then set the slow cooker on low. Let it cook until the cheese is gooey and fully melted, about 60 to 90 minutes.

Leave the slow cooker on the warm setting while serving. Dish up with tortilla chips on the side.
