Beef and Celery Stir Fry (Print Version)

01 - 1 pound flank steak, thinly sliced against the grain
02 - 2 stalks celery, thinly sliced diagonally
03 - 2-3 cloves garlic, minced
04 - 1-inch piece ginger, minced
05 - 1-2 red chili peppers, sliced
06 - 2 tablespoons soy sauce
07 - 1 tablespoon sesame oil
08 - 1 tablespoon oyster sauce
09 - 1 tablespoon vegetable oil
10 - Salt and pepper to taste
11 - Celery leaves for garnish

12 - Cooked rice or noodles for serving

# Instructions:

01 - In a bowl, combine the soy sauce, sesame oil, garlic, ginger, and a good grinding of black pepper. Add the sliced beef and toss to coat. Let it marinate for at least 15 minutes.
02 - Trim the ends of the celery stalks and remove any strings. Slice the celery diagonally into thin pieces.
03 - Over high heat, add the vegetable oil.
04 - Once the oil is smoking, add the marinated beef and stir-fry for 2-3 minutes until the beef is browned on all sides and cooked through. Remove the beef from the pan and set it aside.
05 - Add the sliced celery and chili peppers (if using) to the pan. Stir-fry for 2 minutes until the celery has softened slightly but still has a bit of crunch.
06 - Return the beef to the pan and add the oyster sauce. Stir-fry for another minute to combine everything and heat through.
07 - Serve the stir-fry immediately over cooked rice or noodles. Garnish with celery leaves, if desired.
