Banana Zucchini Oat (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 cup oats
02 - 1½ cups plain flour
03 - 1 teaspoon baking powder
04 - 1 teaspoon baking soda
05 - ½ teaspoon salt
06 - 1 cup white sugar
07 - 2 teaspoons cinnamon, ground

→ Wet Ingredients

08 - 3 cups zucchini, grated
09 - 2 ripe bananas, mashed up
10 - 2 teaspoons vanilla extract
11 - 2 large eggs
12 - 1 cup oil (like canola)

# Instructions:

01 - Preheat oven to 350°F. Use three small loaf pans or one big one, and grease them lightly.
02 - In a big mixing bowl, stir together the flour, cinnamon, baking powder, baking soda, oats, and salt.
03 - In a smaller bowl, whisk together the eggs, mashed banana, oil, sugar, and vanilla until smooth.
04 - Gently mix the wet stuff into the dry mixture. Toss in the shredded zucchini and stir until everything looks even.
05 - Bake for 35 to 45 minutes. The loaf’s edges should pull away from the pan, and a toothpick poked in the center should come out clean.
