Gluten Free Banana Bread (Print Version)

01 - 1½ cups mashed bananas (3-4 medium, extra ripe)
02 - ¾ cup sugar
03 - ⅓ cup melted unsalted butter
04 - 1 beaten egg (large)
05 - 1 teaspoon vanilla
06 - 1½ cups gluten-free flour blend
07 - ¾ teaspoon baking powder
08 - ¾ teaspoon baking soda
09 - ½ teaspoon salt

# Instructions:

01 - Set your oven to 350°F to heat up. Coat an 8x4-inch loaf pan with a lot of cooking spray.
02 - In a big bowl, stir together the mashed bananas, butter, sugar, egg, and vanilla until blended.
03 - In another smaller bowl, mix the flour, baking powder, soda, and salt till combined.
04 - Pour the dry mixture into the wet mixture. Stir well, leaving tiny banana chunks for texture.
05 - Transfer the batter into your loaf pan. Bake for about 50-60 minutes, or until a toothpick comes out clean.
06 - Let it rest for 15 minutes on a rack, then remove it from the pan. Wait until it’s completely cooled to cut slices.

01 - The darker and spottier the bananas, the better the taste.
02 - Leaving some bits of banana unmixed adds a fun texture.
