Baked Chicken Tzatziki (Print Version)

# Ingredients:

01 - 4 chicken breasts, boneless and skinless, weighing about 1.5 lbs
02 - 2 cups chicken stock or plain water if you want it lighter
03 - 1 cup white rice, long-grain or basmati works great
04 - 1 teaspoon garlic powder
05 - 1/2 teaspoon paprika
06 - 1 teaspoon dried oregano
07 - A pinch of salt and some black pepper, as needed
08 - 1/2 cup tzatziki (use homemade or grab some from the store)
09 - 1/4 cup parsley, chopped (optional for topping)
10 - 1/2 cup cucumber, diced (optional for garnish)
11 - Wedges of lemon, optional for squeezing on before eating

# Instructions:

01 - Turn your oven on to 375°F (190°C) and let it heat up.
02 - Spread your uncooked rice across the base of a 9×13-inch dish. Pour the broth or water right on top of the rice.
03 - Mix garlic powder, oregano, paprika, salt, and pepper. Rub this mix all over the chicken breasts, then place them over the rice in the dish.
04 - Dollop some tzatziki onto each chicken breast, spreading it gently across the surface.
05 - Cover the dish tightly with foil and pop it into the oven for 35 minutes.
06 - After 35 minutes, remove the foil and bake another 10 minutes until the chicken reaches 165°F inside and the rice has finished cooking.
07 - Take the dish out and let it sit for 5 minutes. Top it off with diced cucumbers, fresh parsley, and a squeeze of lemon if you'd like.
08 - Scoop the chicken and rice onto plates and dig in while it's still hot.

01 - Switch to brown rice? Add an extra 1/2 cup of liquid and bake for 10-15 minutes longer to cook it through.
