Steak Pasta Salad Bacon (Print Version)

# Ingredients:

01 - ⅓ cup parmigiano reggiano, shredded
02 - ½ cup cooked bacon, chopped up
03 - 1 cup seasoned, thinly sliced, bite-sized cooked steak
04 - 15-18 fresh asparagus spears, trimmed and cut into 1 to 1.5 inch pieces
05 - 8 oz pasta, small shapes like fusilli or lumaconi

→ Dressing

06 - Salt and pepper to adjust seasoning, if necessary
07 - 2 teaspoons apple cider vinegar
08 - ¼ cup sour cream
09 - ¼ cup mayo

# Instructions:

01 - Follow the package instructions to cook 8 oz of pasta until it's al dente. Drain it, rinse with cold water to cool, and leave it to dry off.
02 - Take the asparagus pieces (1 to 1.5 inches long) and steam for 3-5 minutes. They're ready when they're bright green but still have a bit of firmness. Let them cool on a plate.
03 - Combine 2 teaspoons of apple cider vinegar with ¼ cup of mayo and ¼ cup of sour cream in a medium bowl. Mix until smooth.
04 - Pour the dressing over the pasta in a large bowl and toss evenly. Add the remaining ingredients—bacon, asparagus, shredded parmesan, and steak. Stir until everything is well coated.
05 - Add a sprinkle of cracked black pepper on top and dig in right away.

# Notes:

01 - If it seems dry after chilling, a little extra sour cream will loosen it up before serving.
02 - To prep in advance, wait to add the dressing until you're ready to serve.
